I get a box of organic vegetables and fruit delivered every Tuesday from Abundant Harvest Organics.  I noticed the fall fruit has been coming in quickly by the masses, with apples, pears, persimmons and not enough time to know what to do with them.  Any suggestions out there?

Paleo Granola With A Punch Of Health

I wanted to make a low carb, paleo and super healthy granola.  Here you go.

 RECIPE

Ingredients

  • 1 & 1/2 cup raw almonds
  • 1/2 raw sunflower seeds
  • 1/2 raw cup hemp seeds
  • 1 cup flax seed meal
  • 1 cup flaked coconut (unsweetened)
  • 1/3 cup Swerve Sweetener OR coconut sugar
  • 1/2 tsp salt
  • 1/3 cup coconut oil, melted
  • 1 egg
  • 1/2 cup cacao nibs
  • Instructions
  1. Preheat oven to 300F and line a large rimmed baking sheet with parchment paper.
  2. In the bowl of a food processor, combine almonds and other nuts or seeds. Pulse until mixture resembles coarse crumbs with some bigger pieces in there too.
  3. Transfer to a large bowl and add flax seed meal, flaked coconut, sweetener of choice, and salt. Drizzle with coconut oil and stir to combine.
  4. Add egg, and toss until mixture begins to clump together. Stir in cacao nibs
  5. Spread mixture evenly on prepared baking sheet and bake 20 minutes, stirring frequently.
  6. Remove and let cool.

The reason I started baking was because of Dorie Greenspan.  Her books have inspired someone to start the blog Tuesdays with Dorie, an open group, which means anyone can bake along. They bake with two books – Baking with Julia and Baking Chez Moi.  Every month two recipes from each book are chosen, made, and posted on their blogs from each person in the group.  I am up for the challenge so I have joined the group.  Look out for my BWD post and among other things that might inspire me as well.  Bake on!
